Toast nuts in 150c preheated oven for 10 minutes. Once cool down, roughly chop the nuts to small chunks. Chop Jivara into chunks as well.
Sift flour and salt.
Place butter and sugar in a stand-free mixer with a paddle attachment. Beat on high speed for 2 minutes until light and fluffy.
Gradually add egg into mixture.
Add sifted flour and salt. Add chopped chocolate and nuts, mix until the dough is formed. Shape the dough to ball shape in hands, around 45g each. Put into fridge for at least an hour to let set the shape. Once the dough is set, line cookies onto baking tray with baking paper.Baked at preheated oven at 160c for around 15minues, cool down on cooling rack.
