Guanaja Lava Cake

  • 250g Guanaja 70%
  • 235g Butter
  • 235g Caster Sugar
  • 390g Egg
  • 100g Soft Flour
  • 60g Fresh Ginger Juice
  1. Cut out few paper in size 16cm x 5.5cm and 6cm, line the paper in cake rings. Melt butter and Guanaja in microwave. Whip up egg and caster sugar. Add melted chocolate/butter to egg/sugar mix. Sift flour into mixture and fold till even, fold in ginger juice . Fill cake mixture into piping bag and keep in fridge for at least 12 hours. Pipe 60g cake mix into cake ring lined with baking paper. Bake in a 190c preheated oven for 6 – 8 mins. Remove the ring and baking paper, serve immediately.
