Caraibe Basque Burnt Cheese Cake

  • 100g Caraibe 66%
  • 270g Whipping Cream
  • 20g Soft Flour
  • 430g Cream Cheese
  • 87g Caster Sugar
  • 180g Egg
  1. Pre-heat oven to 220c. Brush oil on baking tin, then line out 2 layers of baking paper. Melt Caraibe in microwave. Sift flour and slowly pour in whipping cream. Use a whisk to stir until no flour lumps. Use a spatula to roughly mix cream cheese and sugar, then use a whisk to mix until sugar is melted. Add eggs in 2 to 3 times, mix well. Add Flour/cream mixture, mix well. Pour in melted chocolate, mix well. Sift the mixture and pour into baking tin. Bake at 220c for 22 minutes. Cool down in room temperature before serving.
