Dulcey Sea Salt Cheese Foam
- 100g Dulcey 35%
- 200g Whipping Cream
- 150g Cream Cheese
- 1g Sea Salt
- 50g Milk
- Melt salt and Dulcey in microwave. Add cream cheese and soften it in microwave. Whip up whipping cream until soft peak and fold in dulcey cheese mix. Stir in milk. Set aside in fridge before use.
Durian Milkshake
- 100g Frozen Durian Meat
- 100g Milk
- Blend frozen durian and milk in a mixer until smooth.
Assembly and finishing
Pour Durian Milkshake into glass until 80% full, spoon Dulcey sea salt cheese foam on top and zest some Dulcey as decoration.
